Vermouth the French way

Despite their all squashing dominance the italian vermouths are not the only ones on the market; there are some french brands as well.

The most famous french brand is Noilly-Prat, created in 1834 by Joseph Noilly and Claudius Prat from Languedoc wines. What makes this vermouth special is the fact that it ripens in the open air for several years before the aromatic ingredients are added.

The Noilly-Prat is very popular with both bartenders as well as cooks, because they think it is more aromatic than it's Italian counterparts.

The district Chambery has been know for it's vermouths for nearly 200 years. Starting from 1932 they also have an appellation controlee. The wines can come from other regions. The production methods are the same as on the other side of the alps, but there are clear differences in taste, caused by the used of different types of plants.

Quatre-quarts

Long drink: at any time.

Put in a mixing glass with some ice cubes:

3/10 White Vermouth
3/10 mandarin Liqueur
3/10 Gin
1/10 Grenadine Syrup

Stir well and serve in tumbler glasses. Top off with orange juice and decorate with a strip of lemon skin.

Green Room

This excellent combination of soft and bitter tastes can be served as aperitif and as digestif.

Add to a shaker that is 50% filled with ice:

6/10 Dry Vermouth
3/10 Cognac
1/10 Cointreau

Shake and pour into small tumbler glasses. Decorate with a slice of orange.

 

Palace

This rather strong long drink with naturally fruity taste can be diluted with soda water.

Add to a shaker half filled with ice:

5/10 Dry Vermouth
3/10 Mirabelle Eau de vie
2/10 Campari

Shake and serve in old fashioned glasses with some ice cubes. Decorate with a slice of Orange.

Campari Orange

Simple but refreshing; suitable for any occasion. A true classic.

Add to a large tumbler glass with some ice:

4 cl. Campari
Orange Juice (to taste)

Decorate with a slice of orange.

Bois Rosé

This soft, yet strong cocktail tastes best as an Digestif.

Put in a mixing glass wit some ice:

6/10 Dry Vermouth
2/10 Crème de Cassis
2/10 Benedictine

Stir well and serve in cocktail glasses. Decorate with a preserved cherry.

Capri

The Cognac adds some 'body' to this french version of the Americano.

Add to a shaker half filled with ice:

4/10 Campari
3/10 Rode vermouth
3/10 Cognac

Shake well and transfer to small tumbler glasses. Add strip of lemon skin and serve.

 

Ba-Bu

short drink: Digestif.

Put in a mixing glass with some ice:

3/10 Dry Vermouth
4/10 Wild Strawberry syrup
3/10 Poire Williams

Stir and serve in Cognac glasses. Decorate with a strawberries.

Stado

Short drink: Digestif.

Add to a shaker half filled with ice:

4/10 Red Vermouth
3/10 Scotch Whisky
2/10 Cognac
1/10 Cointreau

Shake well and serve in cocktail glasses. Decorate with a strip of lemon skin.
