Spritzer
Short drink: At any time.
Put in a balloon glass:
7/10 Well chilled dry white wine
3/10 Soda
Serve! |
Cardinal
Long drink: Aperitif.
Put in a mixing glass with some ice cubes:
8/10 Light red wine
1/10 Crème de Cassis
1/10 Raspberry Brandy
Stir well and serve in wine glasses. |

Kir
With this traditionally Burgundic recipe you will soften the somewhat sour bourgogne by adding the Crème de cassis. There are many varieties with other wines and liqueurs. Most import is to choose a lightly sour wine so that the Kir will remain an excellent aperitif.
Put in a balloon glass:
2/10 Crème de Cassis
8/10 Chilled white Bourgogne

A refreshing long drink which is ideal as an aperitif, but only if the wine is dry enough.
Chill a champagne coupe by rolling some ice cubes in it; remove the ice cubes and add:
1/10 Cognac
6/10 Chilled dry white wine
3/10 Ginger Ale or Tonic
Decorate with a half slice of orange. |
Bishop
Warm this would make a good energy drink, but as an cold long drink it makes an excellent aperitif.
Put in a tumbler glass which is half full of crushed ice:
5/10 Red Bourgogne
3/10 Orange Juice
2/10 Lemon Juice
1 tsp. sugar
Stir and add some rum to taste. Decorate with a slice of lemon. |
Punch Vaté (for 12 persons)
Long drink: at any time.
Put in a large bowl:
2 bottles of sweet white wine
1 dl. Grand Marnier
1 dl Cognac
1 thinly sliced orange
1 thinly sliced lemon
1/2 pineapple cut into small parts
Chill in a refrigerator for at least 2 hours. |

Burgundy Cocktail (for 6 persons)
Long drink: at any time.
Put in a bowl with approximately 20 ice cubes:
1 bottle light red bourgogne
1 dl. Ruby Port
1 dl. Orange Juice
2 cl. Lemon Juice
1 L. cold soda water
3 tbsp. Sugar
Stir well and decorate every glass with a half slice of orange. |
