Porto Chocolat
Short drink: digestif.
Put in a shaker half full of ice:
8/10 Port (Ruby)
2/10 Yellow Izarra
1 egg yoke
1 tbsp of cold Chocolate milk
Shake well and serve in cocktail glasses. Sprinkle with cocoa powder.

Prairie Oyster
This morning cocktails is very suitable to recover from a hard night.
Put in a cocktail glass:
1 egg yoke
1 tsp sherry vinegar
1 tsp Worcester sauce
1 tsp Ketchup
4 cl. Sherry
Do NOT stir! Bottoms up.. |

Short Drink: Aperitif
Add to a mixing glass with some ice cubes:
5/10 Soft Sherry
5/10 Dubonnet
Stir and serve in cocktail glasses. Decorate with a strip of lemon skin. |
Coronation
This dry cocktail makes an ideal aperitif.
Add to a mixing glass with crushed ice:
6/10 Sherry
4/10 Dry Vermouth
1 splash of Marasquin
1 splash of Campari
Stir well and serve in chilled cocktail glasses. |
Mexicaport
Short drink: Aperitif.
Put in a shaker that is 50% filled with ice and add:
5/10 Port (Ruby)
5/10 Tequila
Shake well and serve in cocktail glasses. Decorate with a green olive. |
Sherry Flip
With this variation of the Porto Flip you can taste the difference between de 2 liqueur wines from the Iberian peninsula, the port and the sherry.
Put in a shaker that is 50% filled with ice and add:
4 cl. Sherry
1 tsp. Sugar
1 egg yoke
Shake well and serve in a cocktail glass. Sprinkle with meg nut. |

Short drink: Aperitif.
Put in a shaker half full of ice:
4/10 Dry Sherry
4/10 Dry Vermouth
2/10 Pernod
1 splash of angostura
Shake well and serve in large cocktail glasses. |
Woippy
Long drink: Aperitif
Put in a shaker half full of ice:
4 cl. Red port
5 or 6 mashes strawberries
1 tsp. Sugar
Shake well and serve in tumbler glasses. Decorate with a strawberry on a pick. |
Adonis
Depending on the type of sherry, this cocktail can vary in dryness. If you choose the sweeter types it's better to omit the Angostura.
Put in mixing glass with some ice cubes:
7/10 Sherry
3/10 Red Vermouth
1 splash of Angostura
Stir strong and serve in cocktail glasses. Decorate with a strip of orange peel. |
