How to drink Pastis

When drinking Absinth one had to add water and sugar before consumption; this is how a specific ritual and new objects like spoons with holes in them, came into existence.

Because the Pastis are already sweet, one only needs to add water to them. The ice cubes should be added after the water, otherwise they will break the most important aroma's and destroy the dill abstract.

Tomato

A big classic with pastis. Syrups and pastis have come together to create many recipes with unique names.

Put in a tumbler glass:

4 cl. Pastis
3 splashes of grenadine syrup

Top off with ice water and add a few ice cubes.

Perso

Long drink: Aperitif.

Add to a shaker half full of ice:

3/10 Pastis
3/10 Banana Juice
3/10 Pear Juice
1 splash of grenadine syrup
1 splash of orgeade

Shake and serve in large tumbler glasses. Decorate with a few slices of banana.

 

Fréjus

a both dry and soft short drink: very surprising.

Put in a shaker that is 50% filled with ice and add:

6/10 Pastis
4/10 Cointreau
1 splash of Angostura

Shake well and serve in cocktail glasses. Decorate with a slice of lemon.

Absint Special

A short drink in honor of 'the green ferry', absint, the ancestor of the large family of anise drinks.

Put in a shaker that is 50% filled with ice and add:

5/10 Pernod
5/10 Gin
1 splash of Grenadine syrup
1 Angostura

Shake and serve in chilled cocktail glasses.

Fond de Culotte

Another true classic.

Put in a glass with a few ice cubes:

8/10 Suze
2/10 Crème de Cassis

Stir and add water to taste.

Canebière

Short drink: Aperitif.

Put in a shaker that is 50% filled with ice and add:

6/10 Pastis
4/10 Cherry Brandy

Shake well and serve in a cocktail glasses. Decorate with a preserved cherry.

 

Ariane

Short drink: Digestif.

Put in a shaker half full of ice:

6/10 Pastis
3/10 Marasquin
1/10 Cointreau

Shake well and serve in large cocktail glasses. Sprinkle with cocoa powder.

Maya

Short drink: Aperitif

Put in a mixing glass with a few ice cubes:

2/10 Suze
3/10 Pineapple Juice
1/10 Lemon Juice
2/10 Gin
2/10 Pisang Ambon

Shake well and serve in chilled glasses.

Grand Frais

This typically summer long drink can be served as aperitif, but is also very nice on a warm summer evening.

Put in a shaker half full of ice:

5/10 Pastis
3/10 Crème de Menthe
2/10 Orgeade

Shake well and serve in large tumbler glasses. Top off with ice water and decorate with mint leaves..
